$10 Dinner Date: Smoked Salmon, Ricotta, and Chive Grilled Sandwiches [RECIPE]

Good Morning Everyone!

A very happy Saturday to you! Mr. Noob Chef and I are back at it again, bringing you another $10 dinner date. It has been a few weeks since we transformed our usual Friday night into something magical. After a long week we were ready to give each other a little, proper date. So off to the store we went. This sandwich was inspired by a book I read recently. Stephanie Perkins wrote the YA novel, “Anna and the French Kiss”. In it Anna, the main character, is shipped off to boarding school in France much to her dismay. While adjusting to a massive culture shock she meets fellow student, Γ¨tienne st. clair, who is an extrovert and ultimately drags her out of the dorms to see all of Paris.

Walking (and swooning) around the city together they stumble across a street vendor selling hot panini’s. He orders a smoked salmon, ricotta, and chive panini. And she orders a parma ham, fontina cheese, and sage panini. As the drippy cheese filled their mouths they swooned, laughed, and connected deeply. The imagery of the moment filled my mind and I couldn’t shake away the feeling that I just had to try this sandwich! So off to the store we went! πŸ™‚

Thankfully, my family loves bagels with cream cheese and lox. Smoked salmon is a delicacy around here but one that we love to indulge in. So as I picked up the small blue and pink package from the seafood area, everyone’s eyes lit up like it was Christmas Day. “Oooo!” my daughter squealed, dying to taste what I was about to whip up. Even Mr. Noob Chef hurried into the kitchen with me eager to chow down. And wow, did we chow down! These grilled cheese sandwiches are simply wonderful! The ricotta cheese is gentle and smooth. I used a soft, French bread warmed in the oven, and toasted with a generous pat of butter on the outsides. You know when you hear that first sizzle of buttered bread hitting the pan? Remember how that sounds? It’s almost euphoric, right? πŸ™‚ That beautiful crackling of butter against a cast iron skillet, and you know that it’s going to be an epic creation. And it absolutely was.

The smoked salmon blended perfectly with the ricotta cheese and the chopped chives gave a gentle bite to the whole sandwich. It was crispy, yet soft. I ate mine open faced, but Mr. Noob Chef plowed into his with drippy cheese everywhere. He was a “happy camper” lol. It was awesome and I know you will love this sandwich just as much as we did. Smoked Salmon, Ricotta, and Chive Grilled Sandwiches

Serves: 4-6


  • 1 loaf of crusty, artisan French bread
  • Butter
  • 1 packet of chives, chopped
  • 1 (8 ounce) tub of ricotta cheese
  • 1 (6 ounce) package of smoked salmon


Gather your ingredients.


Place butter on the outside of each bread slice. (Go as generous as you want with it. No judgment here!) :). Then place in a hot skillet over medium-high heat.

While the bread is toasting use a spoon to put about 3-4 tablespoons of ricotta cheese and a sprinkle of chopped chives on both sides of the bread. Cook for about 2-3 minutes, or until crispy. Then lay a piece of smoked salmon on the right side of the sandwich. Use a spatula and spoon to carefully flip the top piece onto the bottom piece. Gently press together.


You can cut it in half and stick it in a brown bag for little hands like I did πŸ˜‰
