Cooking With Kids: 4 Ingredient Slow Cooker Chicken Tacos [RECIPE]

How are you today? It’s halfway through the week, and man I feel like I’m racing to get everything back in order from our vacation. But I’m here, and I’m cooking again! While out in Hawaii, my mom had asked my daughter what she wanted to do when she grew up. Without hesitation my daughter said, “I want to own a food truck!”. This was new news to me. But I smiled proudly and made a mental note to get her in the kitchen with me more often. Now that we’re home the time has come. Cooking with kids can seem stressful, messy, chaotic, etc. but it doesn’t have to be.
I’d argue that it’s vital for kids to learn how to cook for themselves. It’s a life skill that everyone should know. It also helps teach children about proper nutrition and how things are made. Yesterday was our first recipe of a series I’m starting on here that my daughter is cooking everything from start to finish. These recipes are simple, budget-friendly, and designed so that your child won’t get stressed in the process. Now the Noob Chef Junior is 10 years old. So if you have really little ones, you might need to jump in and give them a hand. But at this age, mine is ready to flip her own veggie burgers! 😉
This first recipe is for 4-ingredient chicken tacos. You can easily add more toppings to these tacos to make them fancier with cheese, avocado, chopped tomato, etc. But the focus is on the meat. These tacos are so simple for children to make because everything goes into the slow cooker. Then 8 hours later they pull them out, shred with two forks, and serve. Done! We all loved the flavoring in the chicken. Everything was incredibly moist and tender and the best part was seeing my daughter feel so proud at cooking dinner for the family. 4-Ingredient Slow Cooker Chicken Tacos
- 3 lbs. boneless, skinless chicken breasts
- 2 heaping tablespoons minced garlic
- 1 can enchilada sauce
- 2 cups salsa
First gather up your ingredients.
Place the chicken breasts into the slow cooker. (Note: I put sterile gloves on my little ones’ hands when she did this to keep things more sanitary). Then cover the chicken with the sauce, garlic, and salsa.
Cook for 8 hours on LOW. Then pull out and shred with a fork. You’ll want to spoon in some of the flavorful juices to keep the chicken moist and give it an extra kick!
Place in a corn tortilla with your favorite toppings and eat! Enjoy! 🙂
