Our Vegan Thanksgiving Recap! [RECIPES]

Good Morning Everyone!

To all those who celebrated, I hope you had a lovely Thanksgiving! πŸ™‚ To everyone else, hi! How are you today? It’s Black Friday today which means I’m avoiding stores at all costs. Yes, you won’t find me in the stampede of people racing to get that last item that is 80% off…. no thanks. Instead, you’ll find me whipping up delicious Vegan recipes in my humble kitchen and running around outside chasing after my daughter πŸ™‚ Now that’s my kind of Friday. It’s also 30 days until Christmas Eve and 18 days until Hanukkah! Wow, time flies when you’re having fun!

So let’s do a recap of how we had a delicious, cruelty-free Vegan Thanksgiving…

First we began with the tofurkey. I said it. Tofurkey. Don’t look at me weird, I promise it tastes just like chicken. Last year I couldn’t get my hands on one, so I made my own instead! But this year I was fortunate enough to pick up one from Trader Joe’s (for $12.99 USD) and y’all I was blown away!! It was incredible. I didn’t know if it would be like eating flavored rubber… or if the taste would be “weird”. But it wasn’t! No, this tasted like actual chicken and the cranberry stuffing inside was moist and so flavorful. It was the perfect compliment and made a beautiful centerpiece on our plates.

Next came potatoes. I say potatoes, because can you ever have one kind? Yup, we had regular Vegan mashed potatoes made with Earth Balance butter and almond milk. (I even threw in some cooked cauliflower to get more veggies in!)….

As well as sweet potato mash made with Earth Balance, a bit of nutritional yeast (“nooch”!) and a few shakes of garlic powder.

Next came the stuffing because we all know Thanksgiving isn’t complete without stuffing! πŸ™‚ I chose to use Trader Joe’s gluten-free Vegan stuffing and “mmmmm” it was easy, simple, and so tasty. Then we had creamed spinach. (You’ve gotta get those greens in!) which was made vegan by the addition of soaked cashews, nutritional yeast, lemon juice, apple cider vinegar, and vegannaise. It was creamy, smooth, and very flavorful! This recipe was courtesy of lunchboxbunch and so delicious! So please head on over to her blog for more info!

Lastly, Mr. Noob chef and I rounded out our meal with a Bellini. If you don’t know what this cocktail is, stop right now and tune in, my friends. I don’t drink, but this cocktail is super simple to make and will make you swoon from head to toe. I promise! It’s peach bellini cocktail mixer…. (this one to be specific!)…. and Prosecco. Y’all…. okay, here is the cool part. So obviously when you mix your own bellini you can choose the quantities. I go heavy on the peach with a teeny bit of bubbly. Mr. Noob Chef likes it 50/50. But “mmmm”! It’s absolutely delicious and tastes like you’re sucking on a peach without too much fizzy bubbles. That particular brand is ($10 USD) and worth the buy. I highly recommend it! πŸ™‚
