Falling in Love with Oatmeal All Over Again…

Good Afternoon Everyone!

How are you today? I hope you’re having a great day wherever you are across this vast, beautiful Earth. So if you’re new around here, welcome! In the last blog post I discussed how I’m on a 30-day freezer food challenge. I bought groceries for the entire month, cooked up a bunch of meals, and have been pulling them out of my freezer to use. Needless to say, it’s pretty awesome and wow did I save a bunch of money! I cut my food budget in half!

Today I want to share with you my love of oatmeal. It’s such a comforting breakfast food, isn’t it? I used to think oatmeal was those instant packets that you toss with water in a bowl, microwave, and in 2 minutes you’re ready to eat. If you’re still buying those, step away from the box, my friend. I beg you to buy the large canister of rolled oats, or even quick oats if you’re short on time. Steel-cut oats are great, but they do take time to prepare (think: weekend food). So I graduated from instant packets to quick oats with cinnamon and sugar. It’s a step up… but still, I had a lot to learn.

Then somewhere along the way I became lactose intolerant. (Hello 30’s…). So adding that splash of milk over my oatmeal wasn’t an option, but let’s get real: without some liquid over the top it just felt a bit… sticky? Is that the right word? Then finally… finally!…. I came across this recipe. Why hadn’t I thought about adding coconut milk before?! I don’t know. But when I did… it was like a bite of heaven. And nuts? Do you put nuts in your oatmeal? I didn’t either, but now I’m a believer. You get the smooth consistency of the oatmeal that’s flavored with cinnamon, cardamom, ground ginger, and cloves… and then you hit a crunch of a sliced almond and your brain goes, “ahhh” in complete satisfaction. It breaks up the monotony of mush with a burst of crunch, and then you chew through satisfying golden raisins.

I love this oatmeal dish so much, that as I laid in bed last night… I actually felt excited to wake up and eat it again this morning. That’s how good it is! Are you swooning yet?
