Sun Dried Tomato Pesto Roll-ups [5 ingredient recipe]

Good Afternoon Everyone!

Happy Thursday to you! What a beautiful day it is today. It’s the day before Fall here, and the wind is bringing a cool breeze straight off the ocean. It’s lovely. Today’s 5-ingredient recipe couldn’t get easier. Roll-ups. Have you ever gone to Costco and tried the cranberry cream cheese, turkey and cheese roll up? My gosh is it delicious. No doubt it’s a tad high in calories… but wow is it yum.

Today I bring you a much lighter version of that roll-up. The star of this wrap is Tofutti brand cream cheese. Now before you go “ick… tofu?” hang on a moment with me here. I love cream cheese as much as the next gal. I really do. In fact, between you and I… grab me a fresh bagel with smoked salmon, cream cheese, and sliced onion and I am a happy girl.

However… let’s face it: cream cheese isn’t exactly healthy. (Insert tofutti cream cheese).

Now I’ll agree with you. There is nothing more frustrating then trying a Vegan product that is supposed to mimic a non-Vegan food only for it to taste like seasoned cardboard… or worse. Like bacon-carrots. What is that? Carrots cannot be bacon! But I digress. Tofutti cream cheese really doesn’t taste like tofu at all! It’s smooth and creamy. Seasoned to perfection to give you that creamy, rich flavor you’re looking for… all without a drop of dairy in it. Drizzle on some pesto. Add some chopped sun dried tomatoes. And finish with a handful of fresh spinach. Tada! It’s as easy as that, folks! And now for today’s game fact.

Game fact: Guild War 2’s “Path of Fire” is based off the GW2 God, Balthazar, who goes rogue and begins attacking the lands in Elona. Namely the crystal desert. As the hero in the game, you need to venture to the far South with your guildies and stop Balthazar before he burns everything to the ground.

Sun Dried Tomato Pesto Rollups

Serves: 4


  • 8 flour tortillas (2 per person)
  • 1 package of tofutti brand Vegan cream cheese
  • 1 jar of pesto (or make your own to keep it Vegan!)
  • 1 jar sun dried tomatoes, diced
  • 1 small bag baby spinach


  1. Spread out the tortillas on a large cutting board. Smear on some Vegan cream cheese.
  2. Add 1 tablespoon of pesto on top.
  3. Add 1 tablespoon of sun dried tomatoes.
  4. Add a small handful of baby spinach.
  5. Wrap it up and slice in half. Or for an appetizer, slice into rounds like a sushi. Serve immediately and enjoy!
