Sabich [RECIPE]

Good Afternoon Everyone!

Lately I have been craving hummus. Glorious, creamy, decadent hummus. Mmmm! Just the thought makes my mouth salivate. Have you ever had hummus for breakfast? If not, I encourage you to do so. The slightly tangy, savory flavors awaken your senses early in the morning. This Israeli breakfast is absolutely phenomenal and is extremely easy to make. Sabich is roasted eggplant with an Israeli salad of cucumber, tomato, lemon juice, and fresh parsley wrapped in a pita with hard boiled eggs and hummus. YUM! If it were up to me I’d be eating this for breakfast every single day! But as summer approaches and the price of eggplant begins to drop I know I’ll be making this again and again. Yields: 4 servings


  • 1 eggplant, sliced into 1 inch rounds
  • 3 tablespoons extra virgin olive oil
  • Salt and black pepper
  • 4 eggs
  • Israeli salad
  • 4 whole-wheat pitas, warmed
  • 1 cup hummus
  • 1 cup red cabbage, finely shredded

For the Israeli Salad:

  • 2 tomatoes, seeded and diced
  • 1 cucumber, diced
  • 3 tablespoons fresh parsley chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and black pepper


  1. Preheat the oven to 400 degrees (F).
  2. Brush the eggplant rounds with olive oil, salt, and black pepper. Place on a baking sheet and roast for 30 minutes.
  3. Hard boil the eggs then drain, peel, and set aside.
  4. In each pita, open it up and smear 1/4 cup of hummus on the inside. Add a few slices of eggplant, a few spoonfuls of Israeli salad, and a few pieces of chopped hard boiled egg. Wrap in parchment. Repeat to use up remaining ingredients. Serve immediately and enjoy!


  1. Yes!! Eggplant season is coming! Haha. I honestly look forward to it every year. Well, that and mango season! I can’t believe I haven’t tried combining hummus with eggplant yet. I’m totally trying that out soon πŸ˜€
