3-Ingredient Spinach Cupcakes [RECIPE]

Happy First Day of Spring! To all you East Coasters, I hope things are warming up over there. Here on the West Coast it is still a bit chilly, but oh so beautiful. The family and I have a Spring tradition of feeding the birds all season long. Every night we pour a bit of bird seed out on the window sill and the next morning there are a ton of little birds chirping away to wake us up. It is a wonderful way to start the day.
Let’s talk about these cupcakes.
I meant to post this recipe on St. Patrick’s Day, but then the weekend happened and well… I just lost track of time. But these beautiful, green cupcakes would also be perfect for any Spring occasion. I can see them adorned with an edible flower for an afternoon tea party. Or perhaps you put a Peep treat on top for an Easter gathering. The best part is that they are only three ingredients and there are 3 cups of spinach in them! I’m not going to say they are super healthy, but as I ate these it was nice to justify in my brain that at least I was eating my greens. 😉
Anyway, these cupcakes are super light, fluffy, and delicious. Make sure to really blend up the unsweetened applesauce and spinach before adding it to the cupcake mix, or else you’ll have a stronger mineral-flavor once the cupcakes are baked. I used a food processor and mine still had a bit of a metallic taste. It wasn’t a bad taste, mind you. But it did make me need to put icing on these cupcakes to cover up the bitter flavor coming from the spinach. I think you can completely avoid putting icing on it if you really blend the spinach and applesauce in a blender. However, if you like a sweeter cupcake go for sweetened applesauce. 3-Ingredient Spinach Cupcakes
Yields: 15 cupcakes
- 1 box white cake mix
- 3 cups fresh baby spinach
- 1 cup unsweetened applesauce
- Preheat the oven to 350 degrees (F).
- In a food processor or blender, blend the applesauce and spinach until it turns into a fine, green puree.
- Pour into a mixing bowl. Add the white cake mix and stir until well combined.
- Pour into a muffin tin with cupcake liners. Bake for 20 minutes or until a toothpick comes out clean.
- Let cool completely before frosting. Eat and enjoy!
