No Bake Mint Chocolate Chip Cheesecake and Skim Reading [RECIPE]

I have a confession to make: I often skim-read. Do you ever do that? I think I developed the habit in high school when I had to read chapters in boring textbooks. Sometimes it paid off and other times… well…
Over time I just got used to skim reading things. I pick up the main jist and move onto the next task. Now I don’t do this every single time. Many times an article, blog post, etc. will captivate me and I’ll read it in depth. Long story short, I skim-read the recipe for this cheesecake. My husband left early this morning for work with the cheesecake in hand. Now in my mind I remembered that fellow blogger, Cincy Shopper, had put whipped cream puffs on her cheesecake. Mine was hardly that fancy.
What I failed to remember was that the whipped cream was supposed to be mixed into the cheesecake filling… not go on top of it! So when my husband sent me the pictures I narrowed my eyes. “The ratio of cream to filling is totally off!” I texted back. Internally I went: wth? It was time to retrace my steps. I looked back at her recipe and did a double take. Her beautifully sculpted green cheesecake was whipped to perfection because the homemade whipped cream went into the cheesecake. It was at that moment that I literally face-palmed. lol. (My husband assured me that despite my mis-step the cheesecake did taste wonderful and everyone sang his praises). Lesson learned.
