Easy Veggie Burgers That ROCK!

How are you today? I’ll cut to the chase: veggie burgers. I grew up eating frozen veggie patties and at the time I thought they were pretty decent. But I had never tested my hand at making my own veggie patty. I think deep down I thought I would end up with one giant, mushy mess. But this recipe by Liv’s Healthy Life (seriously go check her out on Youtube) is incredible and oh so tasty! The basis is carrots, 1 can of kidney beans, and bell peppers. Quick oats binds it all together and then it’s ready to pan-sear. Lastly, pop it in the oven for 20 minutes to firm up and you’re ready to eat!


Now here is one thing to note: If you were to eat these patties without any condiments, similar to eating just a plain burger patty, it can be a bit bland. So let your imagination wander as you test out different toppings. I made a sriracha-mayonnaise spread and then added some freshly chopped lettuce. It was sublime!

Just as Sonny is to Cher, salt is to pepper, and peanut butter is to jelly… you’ve got to have fries with your burger! This potato wedge recipe is super simple and made my fries come out beautiful and crispy every single time. Enjoy these recipes everyone and keep on cooking! πŸ™‚


Easy Veggie Burgers

Yield: 6 patties


  • 3 carrots
  • 2 bell peppers
  • 1 can kidney beans
  • 2 green onions
  • 1.5 cups quick-cook oats
  • A pinch of dried: parsley, oregano, and garlic powder
  • A pinch of salt and black pepper


  1. Chop up the carrots into a food processor. Then add chopped bell peppers and pulse until minced.
  2. Add the chopped green onions, and kidney beans (rinsed) and blend until smooth.
  3. Add 1.5 cups quick cook oats and pulse until just combined.
  4. Form into patties and pan-sear in a skillet with a drizzle of oil on medium-high heat for 3-4 minutes per side. (Just until it’s slightly brown on each side).
  5. Then transfer each patty onto a foil-lined baking sheet and bake at 375 degrees (F) for 20 minutes and enjoy!


Easy Oven Fries

Yield: 3 servings


  • 4 medium potatoes, washed, peeled, and cut into wedges


  1. Preheat the oven to 425 degrees (F)
  2. In a mixing bowl add the potato wedges. Drizzle with olive oil and season with paprika, parsley, salt, and pepper. (I also seasoned with Montreal seasoning for an extra kick).
  3. Line a cookie sheet with foil and pour the potato wedges on.
  4. Bake for 15 minutes in the oven. Then flip over the wedges and continue baking for an additional 15 minutes and you’re done!

  1. This is a perfect recipe for health. I love the combination of veggies, beans, and oats!! I would tend to guess you can also add some other spices to it before you make the patties and it will be fun to experiment with that a few times!!
