Amish Chewy Oatmeal Cookies and My Summer Bucket List

This summer I’ve made it my mission to slow down. During the school year I’m in “go go” mode, always trying to think one step ahead. But come summer time I try and slam on the proverbial brakes and just soak everything in. Interestingly, as a parent, I’ve found that it’s very easy to get overwhelmed during summer too. Maybe we schedule too many things to keep the kids occupied. Or maybe our children are heading off to overnight camp and so we are busy frantically packing last minute items and labeling all of their clothing. One way or another the days melt by and before you know it school is starting back up again.

Last summer I made a bucket list and worked so hard to check off every item. (There were 50 items). I found myself stressing out about trying to get everything done in the 2 months we had off. It was ridiculous. This summer I’m completely changing my game plan. This year I kept my bucket list short and simple. 25 items that are completely achievable. If I get all 25 completed, great. If not, there’s always next year. But this summer I am going to soak up the sun, play in the pool with my daughter, and just relax. Enjoy my 2016 summer bucket list everyone!   9. Sleep in once on the weekend

  11. Go to the beach

  12. Roast S’mores

  13. Have a โ€œcreate your ownโ€ veggie burger night

  14. Visit a new local attraction

  15. Watch a sunset

  16. Go on a hike

  17. Have a picnic in the park

  18. Have a watermelon seed spitting contest

  19. Have a BBQ

  20. Go to a water park

  21. Make homemade freezer jam

  22. Eat from a food truck

  23. Feed the ducks

  24. Make homemade Popsicles

  25. Build a sandcastle

And what better way to kick off my summer adventures then a cookie recipe! ๐Ÿ™‚ These Amish cookies are absolutely delicious. They make about 5 dozen small cookies so you’re sure to have plenty leftover to store for the beach, or playing outside in the yard. Enjoy this recipe everyone and keep on cooking!

Amish Oatmeal Cookies

Amish Chewy Oatmeal Cookies

Makes about 5 dozen cookies


  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup lard or shortening
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned oatmeal
  • 2 cups sifted all purpose flour
  • ยฝ teaspoon salt
  • 1 teaspoon baking soda


Preheat oven to 350 degrees. Mix everything together in a stand mixer. Drop by the teaspoonfuls onto a greased baking sheet leaving room in between. Bake for 10-12 minutes. Allow to cool for at least 5 minutes before removing to wire racks to cool completely.
