Homemade Ice Cream Sandwiches

In the summer time when I was a little girl one of my favorite sounds was the sound of the ice cream man driving down my neighborhood street. His ice cream truck would play nursery rhymes and he would drive very slowly. All of the neighborhood kids would come racing down their driveway with a dollar in hand and stand waiting for him to come to a stop. I begged my parents to let me purchase a treat and most of the time I succeeded. Every single time I ordered the same thing: a classic ice cream sandwich. Those rectangular chocolate cookie ice cream sandwiches were heaven for me (and they still pretty much are!).

But when I came across this recipe on Kveller.com I couldn’t help but dive in and try it. Homemade ice cream sandwiches during summer break? Yes please, count me in! My daughter loved these ice cream sandwiches so much too. Personally, these cookies were so good that I’d be happy just munching on them sans ice cream. 🙂

Homemade Ice Cream Sandwiches

Yields: 1 dozen cookies


  • ½ cup unsalted butter, at room temperature
  • ¼ cup sugar
  • ¾ cup brown sugar
  • 1 ½ cups unbleached all-purpose flour
  • ¼ tsp salt
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • 1/2 cup M&M candies
  • Several dashes of rainbow sprinkles
  • Ice cream (about 2 tbsp.) of your choice for the sandwich


  1. Preheat oven to 350 degrees.
  2. In a mixer with paddle attachment or by hand, beat butter and sugars together. Add 1 egg and 1 tsp vanilla.
  3. In separate bowl combine flour, salt, baking powder, and baking soda. Add dry ingredients to batter in 2-3 batches.
  4. Fold in m&ms and sprinkles.
  5. Using a cookie scoop portion out cookies onto a baking sheet lined with parchment paper or a silpat.
  6. Bake for 12 minutes. Remove from oven and allow to sit on hot baking sheet 1 minute. Remove cookies and allow to cool completely on a drying rack. If you need to make cookie sandwiches soon, put cookies in fridge to finish cooling.
  7. To assemble, allow ice cream to soften just slightly out of freezer for 3-5 minutes. Add around two scoops to one side of cookie. Top with other and press gently. Working quickly, cover sides with sprinkles or mini m&ms if desired. Serve immediately or put back into freezer immediately until ready to serve. Note: If your kitchen is hot (like mine was) these will melt quickly, so make sure to either serve or pop back in the freezer right away.
